With the cooler weather everyone will be getting in the mood for some FRESH oysters here on the island.

Ocracoke has always been known for it's good fat salty oysters but oysters "mythically" are supposedly only gotten with months that have "R" in them. That is due to the fact that wild oysters spawn in the warmer summer months.

But here on the island thanks to Ocracoke Mariculture we can get their Devil Shoals "farmed" oysters year around to eat. That still doesn't mean we don't go out oystering for them this time of year also.

Growing up I remember my Granny always made oyster fritters for the family. Mind you I am not a oyster fan unless they are steamed or in oyster Rockefeller so I don't really have experience of eating the fritters, but evidently they were good sum cause everyone cleaned their plates. She usually served them with slaw, fried onions/taters and lace cornbread. Whatever you serve with them, enjoy them.
